Come Celebrate National Prosecco Day at Assaggio

August 13th is National Prosecco Day (who knew that was a thing?). In honor of the big day, we put together a list of our favorite prosecco-heavy cocktails, from our signature negroni to tequila spritz. Read more below!

The History of Prosecco:

Prosecco has a rich history that stretches back centuries in northeastern Italy. It originates from the Veneto and Friuli Venezia Giulia regions, where the Glera grape has been cultivated since at least the 9th century. The wine takes its name from the small village of Prosecco, near Trieste, which is believed to be where it was first produced. For generations, local winemakers refined their craft, developing the light, aromatic style that defines the wine today. In 2009, the Prosecco DOC and DOCG designations were established to protect its authenticity and ensure that only sparkling wines made from Glera grapes in this specific region of Italy could carry the Prosecco name. Over the decades, it has grown from a regional Italian treasure into one of the world’s most beloved sparkling wines—poured at celebrations from Milan to Boston, and everywhere in between.

Our Top Prosecco Cocktails at Assaggio:

Aperol Spritz

The classic that started it all. Our Aperol Spritz pairs bittersweet Aperol with cold, bubbly Prosecco for a drink that’s as golden as an Amalfi sunset. Bright, breezy, and impossibly easy to love, it’s the ideal way to kick off your celebration.

Negroni

A refined twist on the beloved Italian aperitivo. We blend Hendrick’s gin, Campari, and Antica Carpano, then lift the whole thing with a splash of Prosecco and a dash of orange bitters. The result is beautifully balanced—bittersweet, aromatic, and endlessly sippable.

Positano

Named for the coastal town that inspires our kitchen, this cocktail is pure sunshine in a glass. Prosecco meets Combier peach and a splash of orange juice for a drink that’s fruity, floral, and utterly refreshing. One taste and you’ll feel the sea breeze.

Tequila Spritz

For those who like a little spirit in their sparkle, this one’s a standout. Código Blanco tequila mingles with St. Elder, Prosecco, agave, and fresh lime juice, creating a lively, citrus-forward drink with just the right amount of zing. Bold and bubbly, it’s a celebration all on its own.
